Nori which side out

Pull gently on the mat with your right hand. Gently squeeze the mat to form a tight roll. Remove the mat. With a very sharp knife, cut the roll in half. Put the halves together and cut into 6 pieces in total, wiping the blade between each cut.

Make your own California rolls with Makiko's delicious recipe. Rub the grapeseed oil or mayonnaise into your palms and fingers. Take the rice in your right hand, if you are right-handed. Or simply reverse all the instructions. Hold the prawn or other topping in your left hand, across the base of your fingers. Place your rice on top of the fish. Put your right index finger on top of the rice.

Wrap your left hand around your right index finger, squeezing gently to make a nice shape. Turn your nigiri so the fish is on top, still placed over the base of the fingers.

Repeat the wrapping and squeezing steps to form a neat, compact piece of nigiri. When you work with the nori though, you should keep them as dry as you can. That is why you should have a bowl of water with a bit of rice vinegar added to it and a tightly squeezed wet hand-towel nearby when making sushi. Later on, the margins need to be empty of rice in order to close to sushi roll properly.

Be careful not to compress the rice, but merely spread it over the nori. Now it's time to place a slice of fish preferably no more than one on the center of rice, along with pre-cut slices of vegetables carrot, cucumber, green onion, asparagus, and so on Using the closer edge of the rolling mat, close on the filling with the nori making a rectangular shaped hill and tighten it from above. See photo gallery. Move forward, continue rolling in the rectangular hill steps, keeping it tight with every move until you reach the end of the nori.

Put pressure on the roll from all three sides at all time, especially on stops to allow it to roll tightly. Use a very sharp knife to cut the roll into little sushi units. Each time, make sure you clean the knife especially so that there is no rice sticking to it with wet towels.

Try not to press the knife onto the roll. Use knife with stroke motion like using saw. Putting your index finger on the back of blade makes you look like a professional sushi chef.

Cover the bamboo mat with a plastic wrap about full rounds of wrapping. This prevents rice sticking to bamboo mat. You need to break down the nori sheet in half, along the lines you see on the nori sheet or cut it in half with a knife. Then flip the nori over so the rice is face down on the bamboo mat. In a food processor, pulse 2 large torn sheets of toasted nori until finely ground.

Season with kosher salt and pepper. Refrigerate until ready to use. This dip is great served with cut-up vegetables and pita chips, smeared on a fish sandwich, or served with peeled and cooked shrimp in place of cocktail sauce. Yes, you could call this a hand-roll bar, too, but I like to eat everything folded up in squares of toasted nori like a taco. Begin by cutting your larger sheets of toasted nori into 4-inch squares.

Next, prepare your toppings: Julienne some carrots , scallions , red bell pepper and shiso leave , if you can find it. You can buy sushi-grade tuna or salmon from most grocery stores with a good fish counter.

Set out furikake nori double-duty! Lastly, make a quick avocado salad think of it as your salsa! Gently toss and season with kosher salt and pepper.

Congee , that thick and creamy rice porridge that's eaten in various forms all over Eastern Asia, is a great dish to add to your repertoire if you don't make it already.

This version from chef James Syhabout is packed with bright ingredients like lemongrass, lime juice and fish sauce.
