I don't know where I went wrong but I added all the right ingredients and this damn recipe made 15 [filtered] empanadas! I have a family of 4, how the hell are we supposed to eat 15 when we can barely eat one! I am so angry right now.
Anyone want one? Another great recipe from MarthaStewart. I didn't use the jalapenos in my version, and I added whole kernal corn to mine. Next time I plan on adding sauteed bell peppers as well! The dough recipe provided is just perfect! Simply the best. They are perfect for the freezer. In summertime I reheat them in an aluminium foil over the BBQ. These are really good!
I'm not very good at rolling out the dough and they don't look very pretty but they taste great. Really good!!! I made these with a Filipino Lumpia filling instead of the filling in the recipe. Try this recipe using cornmeal. It is delicious! Add a little bit of milk when you are preparing this dough. Your empanadas will be more crunchy. Stir to combine the ingredients well, breaking up any large pieces with a wooden spoon or a spatula as you go. We recommend using ground sirloin in this recipe because it tends to have a lower fat content than other ground beef.
That said, fat content in ground beef varies, and it may be a little too much. If you feel there is too much grease in the skillet after browning the beef, remove some of it. To do this quickly, and neatly: remove the skillet from the heat, pile the ground beef to one side of the skillet and tip it slightly so the oil pools on the other side. Scoop out the oil using a large serving spoon or ladle and add it to an empty can or container.
Continue scooping until most or all of the oil is gone. Then level the skillet, place it back over the heat and continue with the recipe. Add the tomato sauce, water and Worcestershire sauce to the skillet. Stir well to combine. Lower the heat to medium-low and cover. Cook the ground beef for minutes, or until most of the liquid has cooked out. Taste the beef filling and add salt to taste, if needed.
Remove the skillet from the heat, uncover and allow the ground beef to cool. Give it a good stir every once in a while so that the steam escapes and it cools a bit faster. I love empanadas! Especially the baked style they are a bit easier to deal with than frying. I also use the Obrien potatoes and cook them separate in a cast iron skillet and add to the mixture. This recipe is a great base and you can add extra little things too, like sliced olives, ground up hard boiled egg, shredded cheese.

For Assembly: 1 large egg whisked with 1 tablespoon water. Instructions To Make the Dough: In a large bowl, mix together the flour and salt. Using a box grater, grate the cold butter atop the flour mixture. Working quickly, and using your hands, break the butter bits into the flour until they're evenly distributed and resemble the size of small peas. When the oil is warm, add the ground beef. Break up the ground beef using a wooden spoon.
Sprinkle with a few pinches of salt and pepper. Cook the meat until mostly browned. Add the diced onion, red bell pepper and garlic. Cook until softened, about 5 minutes. Add the green olives, tomato paste, cumin, paprika, crushed red pepper and a few pinches of salt.
Give it a good mix and cook about 5 minutes more, stirring occasionally. If the mixture seems a bit dry this will depend on how much fat your ground beef has , add a splash of water. Using a 6-inch round cutter or you could use a bowl and trace out circles with a sharp paring knife , cut out as many circles as you can. Re-roll the scraps and cut out a few more. Transfer the rounds to a parchment-lined baking sheet.
Lightly brush each dough round with egg wash. Add a tablespoon of the meat filling to one side of the circle of dough; fold the dough over, creating a half-moon shape. Using the tines of a fork, seal the empanada's seam together by pressing them together. Repeat until you've worked through all of the empanadas. Transfer the baking sheet of empanadas to the freezer to chill for 15 minutes.
